Avocado "Fries" & Sprouted Amaranth Cracker Recipes


I love to make raw snacks. Healthy raw oils like those from seeds, nuts, avocados and olives are very important in a vegan diet, especially if you are endeavoring to eat more raw foods.

These are sprouted amaranth seeds. They are tiny and very hard to deal with and hard to photograph.

These are about 2 days old sprouts.


















Sprouted amaranth crackers
1/2 cup sprouted amaranth 1/2 cup flax seed
pinch of salt
1 tsp cumin
water as needed (not much)
In food processor until a thick smooth paste
Turn out and evenly spread on dehydrator sheet, score for the size crackers you want.
Dehydrate at 115F until stable on top (about 1 hour) then turn out on rack and continue to dry until they are as crisp as you want them.

I also made some avocado fries today.

Avocado "Fries"
Slice one avocado into strips
sprinkle with nutritional yeast on both sides.
Sprinkle w whatever other spices you want, a pinch of salt, cumin, black pepper, lemon, garlic, etc.
place on dehydrator rack and dry at 115F for approx 1 hour until you are able to handle them w/out them falling apart.















Red lettuce with avocado fries, sprouted amaranth crackers, turnip pickles and fermented cashew cream.

Raw Vegan Grilled Vegetables

Raw Vegan "Grilled" vegetables

thinly slice:
seeded yellow bell pepper
1/2 seeded jalapeno
1 seeded tomato
coat with a mix of 1 tbs soy sauce, 1 tbs olive oil, sprinkle of cumin and sprinkle of dried cilantro
Put coated veges in dehydrator until they begin to soften.
Remove from dehydrator before they start to get crisp.
May be re-warmed in dehydrator in a shallow bowl before serving.
















Serve as a side dish or in wraps with spicy walnut meat.

My Raw Vegan Dinner Last Night: Enchilada Salad

Clockwise from 12 o'clock: Red lettuce, sliced avocado, failed tortilla chips, grilled vegetables, sauerkraut, spicy raw pickles and in the center is spicy walnut filling and mild sweet corn salsa. All over the top is cashew sour cream.

Fantastic.

I tried to wing a raw tortilla recipe but the tortilla failed so we had Enchilada Salad and used the fail as chips. It worked out deliciously, I must say. The show must go on and all that.

Raw Vegan Pizza

I love raw vegan pizza.

Dinner tonight was Perfect Pizza Crust topped with chopped heirloom tomatoes, mushrooms, green olives onion and topped with raw cashew cheese that I froze and grated.















Here is the crust in the dehydrator. That is enough for 2 personal pizzas or four slices.
















I put some of the cheese on a cracker and put in in the toaster oven to see if it would melt.









It did not.





Layer the ingredients. I like to put a thick layer of tomatoes on first and build up from there.


A little shredded cashew cheese and tomatoes















Mushrooms on top of that.














And keep loading it from there. I put green olives, onions and a bunch more cheese then cut it in half and we each had a slice!

Just a basic cheese, nuts, nutritional yeast, salt and lemon juice in the food processor until a very smooth paste (this was like play-dough) then roll it up in a piece of wax paper and freeze until hard. Grate and sprinkle quick cuz when it melts it's play-doh again.


Anyway, that is how easy it is to make raw pizza. I hope you try it soon and I hope you take photos and share them!

Raw Vegan Fermented Cashew Sour Cream or Yogurt Recipe

This recipe changed my life!
Blend a cup of soaked cashews (or any other nut you like) with enough water to make a thick paste about the consistency of sour cream. More water if you want a thinner kefir, yogurt or buttermilk consistency
Put the nut paste in a jar. Leave about 2 inches of room at the top of the jar because it will GROW.

Put the jar in your dehydrator (remove the trays) with a loose lid. Set it at about 95F. (This can be done in any warm place but it may take longer. See note below)

Leave it over night and it should look like this in the morning:

















See the bubbles? It's alive!















Stir it down and add salt or other seasonings if you like. I like it plain.
Store covered in the fridge almost indefinitely. Use just like you would sour cream in just about any recipe, as far as I know.
The longer you let it set the more sour delicious it gets.

I like to take a jar of this on road trips with me. It tastes better every day!

Note for those of you who don't have a dehydrator: If you don't have a dehydrator keep it in a warm place and it will ferment, it just may take a bit longer. My MIL preheats her oven to the lowest temp, turns off the oven then puts the jar in a water bath in the oven overnight and that method works for her. I also know someone who uses a heating pad on low heat in a box. A home yogurt maker might work, too.

Brussel's Snacks

I love Brussel's Sprouts! I buy more than I will use and store them the same way I store leafy greens, but I don't take off the individual leaves, just store them whole, wrapped in a towel. Right? because taking off each leaf would be silly.
















Slice a pound or so of Brussels sprouts in half. I used about 3 cups here.

Put them in a large bowl with 1 tbs olive oil, 1/2 tsp salt and a couple of grinds from the pepper grinder (or whatever seasonings you like). Stir well so all the sprouts are coated evenly.















Spread the sprouts on dehydrator try and dehydrate at 118F for approx 4 hours. The longer you dehydrate the crisper they will be. I like mine wilted, but not crispy.















These will keep in the fridge for a few days or in the freezer up to a month or more. They are a delicious snack or you can use them in cooked recipes.

Almost Raw Vegan Lunch Ideas! Salad and Zucchini Chips

Dehydrating zucchini chips. These are very simple, just sliced zukes covered in soy sauce and a tbs or so of nutritional yeast. They are humming away in the big D right now at 125F Should be ready for after dinner snacking.
















My gorgeous salad contains microgreens, green onions, rainbow chard, zucchini, avocado, sauerkraut and a sprinkle of nutritional yeast.
















Ok, ok, nutritional yeast is not considered raw, I know. Neither is soy sauce. but hey, I'm doing my best.

I could be eating french fries and faux meat on bread, right?

Raw Vegan Chili And Cornbread Summer Dinner Idea

This dinner takes about half an hour to prepare, not counting dehydrating time of about 4 hours, minimum. The corn and rice take about 20 minute each. they are just steamed... The chili and cornbread can be prepared early in the morning and will wait in the dehydrator until you are ready to eat. It couldn't be easier or more delicious.


Lightly steamed corn on the cob, Red lettuce with shredded carrot salad, Spanish style rice, raw chili, raw corn bread.











This is the second time I made this dinner and we really love it!


Spanish rice is:

2 cups vege broth
1 tomato pureed in the blender and strained through a seive to remove the seeds and skins
1 cup rice
Cook this like you would normally cook rice. Takes about 20 minutes.

Raw Corn Bread is:

8oz frozen corn kernels
half a carrot
rib of celery
3 tbs ground flaxseed
3 dates
1 tbs vinegar

Put all in FP and process until its a thick, chunky paste. Spread it on a sheet and dehydrate at 125F until it's as dry as you want. I like it thick and flexible for this recipe. Thin and crispier and it will be CORN CHIPS. Two recipes for the price of one!

Raw Vegan Chili is:

1 med carrot
2 stalks celery
1 bell pepper
2 roma tomatoes
2 leaves of kale, or more.

Chop everything into bite size pieces. Used the food processor with slicing blade to slice carrots, celery and pepper. Hand chop the tomatoes and kale.

Mix veges together in a flat pan. I used my 9x13" glass baking casserole. Put them in the dehydrator at 125F while you make the chili sauce.

Chili sauce:

5 roma tomatoes
1 avocado
2 tbs ginger, peeled
2 cloves garlic
1 med yellow onion
1/2 tsp dry mustard
2 tsp Mae Ploy Curry Paste. I looked it up, this curry paste IS RAW! Watch the vid on the website. The one they show used shrimp but the yellow curry does NOT! A Major Coup.

Pour this into your mixed veges and stir it up.
This is ready to serve now, or dehydrate it at 125 F until you are ready to eat it. It just gets softer and tastier the longer you leave it in the D.

Raw Vegan Carrot Cake Cookies





Good morning everyone!
What a beautiful day juice feasting yesterday!

This morning I bring you my recipe for Raw Vegan Carrot Cake Cookies. The cookie/cake isn't very sweet but the pecan date topping is. Serve these for breakfast, brunch or dessert. I had mine for breakfast this morning with a cup of roastaroma. I ate the garnish, too :)

The cookie is

1 cup of carrot pulp from juicing
1 apple cored and chopped
1/4 cup ground flaxseed
2 tbs flaxseed oil
Water if needed to blend

Chop in Food Processor with s-blade until smooth.
Spread on dehydrator sheet about 1/2" thick or as thick as you want your cookies to be.
Dehydrate at 120F for 2 hours or until you are able to flip it onto the rack.
Continue to dry at 95-112F overnight or until it's stil flexible but not crumbly.
Freeze the big cookie for two hours and then cut it into the size and shapes you want your cookies to be.

Topping
I didn't measure but
A bit handful of pecans
12 or so dates
In FP with s blade chop it until it's a lumpy paste
Press the lumpy paste to the top of a frozen cookie and shape it with your hands. Allow to thaw in the fridge and serve with hot tea or coffee.

For dinner last night I had a huge salad made from greens that I grew woot, sauerkraut that I made aw yeeah, and raw leeks and celery. I had a bowl of the potato leek soup slurp! and TWO slices of bread with brazil nut cheese nomnomnom.

I was full but it felt good. I like juice feasting one day a week, but I really like to prepare food and eat it with my family, not just chop and juice and clean the juicer and repeat all day. One day a week is enough for me now. That could change in the future.

mid Morning Stinging Nettle Smoothie















YUM!

1 cup fresh tender nettle tops
1/2 cup fresh mint
1 banana
e3live and renew me (see link in sidebar)
20 oz water

Blend and drink!

I actually pricked both of my thumbs with nettles today. It itched for about 5 minutes then nothing.

The man doesn't like to eat the nettles. Stigma. He says he wants to but somehow the whole "weeds from the yard" idea makes him a feel a little squee. I say tough, they are going to be in every meal for the rest of the summer! but I only half mean it :)

3 days of raw. today has been the best day, no slip ups, no munching.

I bought a Ronco Dehydrator at a yard sale. Any one want a Dehydrator? Make me an offer.
If I don't get a good offer, I will sell it on eBay next week.

Raw Vegan Dessert Ideas! RAW Strawberry Shortcake



This is sweet and light. A refreshing raw dessert.

Inspiration from Rediscover Raw Food


Serves 3

Cakes!



1 cup pecans
5 dates
5 figs
2 tbs flaxseed, ground
2 tbs lemon juice
1.5 tbs coconut oil
Vanilla to taste
Puree until a dough is formed. Make 6 small cakes and dehydrate on parchment until firm enough to flip off the paper on to the rack.

Dehydrate until they are firm but not crumbly, About 8 hours at 115F.

Sauce!


1/2 cup berries
1 tbs sugar
1 med banana
1/2 granny smith apple
2 tbs lemon juice

Blend until positively saucy.
I made two sauces for extra color on the plate.

Put one cake on a plate, pour a bit of sauce and arrange some berries. Put the second cake on top and add more sauce. Garnish with blackberry sauce and serve immediately.

Beet Your Meat Raw Vegan Burgers :: They Beat Meat, Hands Down!

I endeavor to keep it as raw as I can.

This morning I juiced celery, beet greens and carrot with a bit of ginger. I thought it would be nice to have burgers. Raw burgers that are better than anything cooked.
So I made up this recipe:

Beet Your Meat Raw Vegan Burgers

Process about 1 cup of juicing pulp in FP with
1/2 small beet root chopped
2 cloves garlic
one med onion chopped
one roma tomato chopped
2/3 cup walnuts
1 tsp cumin
1/2 tsp salt (optional)

Form patties on parchment paper and dehydrate at 125F for about 2 hours.















When the patties get crispy on one side flip them out on the rack and dry for another 2 hours at 115F, until they are crispy on the outside and tender in. These can be made a few hours in advance and warmed in the dehydrator for 15-20 min at 125F before serving.

Dress them like you would any burger and chow down.

I am keeping it raw so I had mine on a collard leaf with seed cheese, tomato, sauerkraut and onion. I picked the whole thing up and folded it like a taco and yum yum.
Collard leaves are the new bread.

Raw Vegan Dessert Ideas :: VEGAN Banana Cream Pie with Walnut Crust :: NO Tofu!










The man looked at the pile of bananas turning brown on the counter, then he looked at me and said "you should make a pie"






I adapted this recipe from John Tobe's No-Cook Book. (1969)


Crust

2 cups finely crushed raw walnuts pressed in a pie plate. place in 115F dehydrator while making

Banana Pudding for the filling

4 ripe bananas
5 chopped dates
2 tbs lemon juice
1/4 tsp vanilla
2 tbs sugar or natural sweetener of choice (optional)
Water to blend
Blend until a pudding consistency
Pour in crust
Continue to dehydrate at 115F while making

Sweet nut cream topping

1/2 cup Brazil nuts
2 tbs sugar or natural sweetener of choice about 5 chopped dates work fine in this
1 tbs lemon juice
Water to blend
Blend until very very creamy. There will be small brown flecks.
Pour on top of the banana filling and garnish with walnuts if desired















Dehydrate for 6 hours longer if you want it firmer, at 115F. Serve warm or cold. Keeps well in the fridge but eat fresh for best taste.





























The lemon juice makes it light and fresh. This delicious raw vegan dessert comes together rather quickly. About 15 minutes prep time and 6 hours in the dehydrator.

The lemon juice makes it taste lighter and the added sugar, while totally unnecessary, makes it sweeter. I could have eaten the whole pie but there were others and I had to be polite. I might make banana pudding for lunch today :)

Vegan Carrot Soup, Fat Free Garlic Baked Potato, RAW Vegan Banana Pie with Raw Walnut Pie Crust Dessert Recipe

I love carrot soup.















This time I cooked up a bunch of carrots 1/2 cup of dry black eyed peas and some juicing pulp. Cooked it until the beans are soft then let it cool and blend the whole mess. Put it back in the pot and add more water, chopped carrots, 1 cup of dry black eyed peas and season to taste. Let it cook all day, adding more water if needed or turn it off when the peas are cooked and then reheat it at dinner time.

Vegan Fat Free Roasted Garlic Baked Potato

Prick a washed potato.














Put it in a piece of foil with a large, raw, peeled clove of garlic. Be sure to cut off the hard end of the clove, no one wants to eat that.














Bake in foil for 1 hour at 500F. Woo! that is hot. Don't try to touch them. I let mine sit on the table for over half an hour and it was still screaming hot! They are done when a fork easily poke in the side. If too hard, keep baking for 10 minute increments until done.











I served them in these little bowls for ease of transport. Just bake them right on the oven rack, no problem.



Cut the garlic into the baked potato. It doesn't need anything else but you could put some salt and herbs if you want.

Dinner last night
















Baby greens salad with apple pear salsa, sauerkraut, seed cheese and some leftovers that I reheated. Carrot loaf in front and some Indian style veges. There is the roasted garlic potato before cutting. I think it's beautiful. You could even put some vegan buttery spread on this if you wanted, but then it wouldn't be fat free, oh well :)

I am in the process of making some raw seed cheese crackers. I put flax seed, yeast, some sunflower seed cheese and lemon juice together and put it in the dehydrator.














I will let you know if it works, but I don't see why it wouldn't.

I will make a pie with walnut crust and a banana filling. I guess I will go look at some recipes and get some ideas. Maybe I can make a sweet sunflower cheese as a cream topping... The other animals humans eat, use in science, hunt, trap, and exploit in a variety of ways, have a life of their own that is of importance to them apart from their utility to us. They are not only in the world, they are aware of it. What happens to them matters to them. Each has a life that fares better or worse for the one whose life it is.

That life includes a variety of biological, individual, and social needs. The satisfaction of these needs is a source of pleasure, their frustration or abuse, a source of pain. In these fundamental ways, the nonhuman animals in labs and on farms, for example, are the same as human beings. And so it is that the ethics of our dealings with them, and with one another, must acknowledge the same fundamental moral principles.

At its deepest level, human ethics is based on the independent value of the individual: The moral worth of any one human being is not to be measured by how useful that person is in advancing the interest of other human beings. To treat human beings in ways that do not honor their independent value is to violate that most basic of human rights: the right of each person to be treated with respect.

The philosophy of animal rights demands only that logic be respected. For any argument that plausibly explains the independent value of human beings implies that other animals have this same value, and have it equally. And any argument that plausibly explains the right of humans to be treated with respect, also implies that these other animals have this same right, and have it equally, too.

It is true, therefore, that women do not exist to serve men, blacks to serve whites, the poor to serve the rich, or the weak to serve the strong. The philosophy of animal rights not only accepts these truths, it insists upon and justifies them.

But this philosophy goes further. By insisting upon and justifying the independent value and rights of other animals, it gives scientifically informed and morally impartial reasons for denying that these animals exist to serve us.

Once this truth is acknowledged, it is easy to understand why the philosophy of animal rights is uncompromising in its response to each and every injustice other animals are made to suffer.

It is not larger, cleaner cages that justice demands in the case of animals used in science, for example, but empty cages: not "traditional" animal agriculture, but a complete end to all commerce in the flesh of dead animals; not "more humane" hunting and trapping, but the total eradication of these barbarous practices.

For when an injustice is absolute, one must oppose it absolutely. It was not "reformed" slavery that justice demanded, not "reformed" child labor, not "reformed" subjugation of women. In each of these cases, abolition was the only moral answer. Merely to reform injustice is to prolong injustice.

The philosophy of animal rights demands this same answer - abolition - in response to the unjust exploitation of other animals. It is not the details of unjust exploitation that must be changed. It is the unjust exploitation itself that must be ended, whether on the farm, in the lab, or among the wild, for example. The philosophy of animal rights asks for nothing more, but neither will it be satisfied with anything less.

Can you really ask what reason Pythagoras had for abstaining from flesh?
