Vegan Sweet Potato Chili Recipe!

I was inspired by A Life Less Sweet to make this chili.

Sweet Potato Chili

You will need

1 med onion, chopped
3 ribs celery, diced
1 medium carrot, chopped small
3 roma tomatoes, chopped
1 sweet potato peeled and cubed
1.5 cup water or vege broth

Spices:
1tsp coriander
1 tsp onion powder
1 tsp cumin
1 tsp paprika
1 tsp garlic powder
.5-1 tsp red chili flakes (or more, adjust to your taste)
.5 tsp salt
1 tbs ACV

What you will do:

Brown the onion in .5 tbs (as little as you can get away with) of vegan margarine (I used Earth Balance) or oil.

Add chopped veges and water and let simmer until veges start to get soft.
Add spices and stir. Add a little more water if necessary
Cover and let cook, the longer the better, keep an eye and don't let it burn.

Serve with a green salad, rice, quinoa, beans, tortillas and chopped fresh tomato and onion.

This recipe freezes well so don't be afraid to double or triple it and save yourself some time in the future!

Raw Vegan Lunch Idea! Seaweed Noodles with Pumpkin Seed Curry Sauce

Talk about quick and easy lunch! I decided I wanted this at 11:30 and was sitting down eating it by noon.

Soak your seaweed strips in cold water for 10-20 minutes. These are the raw noodles.

They have a mild, fresh taste and they aren't too chewy. I bought them in an Asian food market in SF.

Drain them and place in a serving bowl.

Make a raw sauce in your blender

I used

Pumpkin Seed Curry Sauce
1 tbs pumpkin seeds
2 dates
2 tbs water
1 clove of garlic (or less. I looo-oove garlic)
1/4 tsp curry powder
1/4 tsp cumin

Blend all this up until its a creamy sauce and pour it over your raw seaweed pasta
I garnished with sliced carrots for some color

Enjoy!

Juicing for lunch

Well, here is is Wednesday.
I had juice for breakfast and juice for lunch so I guess I'm juice feasting today! Yay!

Lunch today was the most beautiful glass of juice I have ever made. A bunch of carrots, a hunk of ginger and an orange.

It's so good I don't want to drink it because then it will be gone! I might just have to make another.

Tonight dinner will be a cauliflower and potato curry over quinoa with green salad.

Raw Vegan Carrot Cake Cookies

Good morning everyone!
What a beautiful day juice feasting yesterday!

Shown with Roastaroma tea. These would be so good with coffee!

This morning I bring you my recipe for Raw Vegan Carrot Cake Cookies. The cookie/cake isn't very sweet but the pecan date topping is. Serve these for breakfast, brunch or dessert. I had mine for breakfast this morning with a cup of roastaroma. I ate the garnish, too :)

The cookie is

1 cup of carrot pulp from juicing
1 apple cored and chopped
1/4 cup ground flaxseed
2 tbs flaxseed oil
Water if needed to blend

Chop in Food Processor with s-blade until smooth.
Spread on dehydrator sheet about 1/2" thick or as thick as you want your cookies to be.
Dehydrate at 120F for 2 hours or until you are able to flip it onto the rack.
Continue to dry at 95-112F overnight or until it's stil flexible but not crumbly.
Freeze the big cookie for two hours and then cut it into the size and shapes you want your cookies to be.

Topping
I didn't measure but
A bit handful of pecans
12 or so dates
In FP with s blade chop it until it's a lumpy paste
Press the lumpy paste to the top of a frozen cookie and shape it with your hands. Allow to thaw in the fridge and serve with hot tea or coffee.

#################################

For dinner last night I had a huge salad made from greens that I grew woot, sauerkraut that I made aw yeeah, and raw leeks and celery. I had a bowl of the potato leek soup slurp! and TWO slices of bread with brazil nut cheese nomnomnom.

Playing with my food

I was full but it felt good. I like juice feasting one day a week, but I really like to prepare food and eat it with my family, not just chop and juice and clean the juicer and repeat all day. One day a week is enough for me now. That could change in the future.

Raw Green Smoothies and Juices for Health Every Day!

Good Morning!

Today's Green Smoothie of Life

2 handfuls red leaf lettuce
1 banana
1 kiwi
1 tbs each E3AFA and RenewMe!
Juice and pulp of one orange.
1 tbs peanut butter
20 oz water
mmmmm.
I split that with the man. He likes the peanut butter.
After the guys left I had a big glass of carrot and beet juice.

That wasn't enough so I made one of my favorite juice recipes. This is a savory juice or a raw soup if you float some chopped up celery in it and serve it in a bowl.
Celery Cocktail or Raw Celery Soup

About 15 ribs of celery (two heads, minus the hearts. i use the hearts in soup later today!)
1 lrg clove of garlic
juice of one lemon.

Drink in the tangy, green goodness.

I love garlic. I try to eat or drink a clove every day if I can. I'm going to be juicing and juice feasting all day today so tune in for some more tasty, healthy liquid treats!

There was a June bug in the house this morning. He was moving really fast, this was the clearest shot I could get of him. He was released in the backyard shortly after this photo was taken and was probably eaten by a hungry bird with a bunch of chicks to feed but I don't know.

Have you heard the legend of the headless third grader?

Neither have I, but I have been seeing this guy on shores of Klamath lake, on the side of the road on sunny weekday mornings.

A haunting? I don't know.

Well, that was my morning.
Now if you will excuse me, I'm going to finish my celery cocktail and then go get on the mat. :)

Savory Celery Carrot Juice Soup Raw Vegan Lunch

You will need a juicer for this recipe.

1 head of celery
1 carrot
1 thumb of ginger
1 green zucchini
1 tbs ACV

Juice the veggies and stir in the vinegar.

A quick raw vegan lunch, great for a juice feast, or a starter for a brunch or summer dinner.

The zucchini adds a creaminess to it, gives it more body.

Woke up this morning, late

Feeling a little hungover. yucky mouth, eyes glued shut, headachey, dehydrated. Maybe it was the raw-ish chocolate cake I had before bed. I really don't know

So, I had a quart of water at 6:30. Then, about a half hour later, I had another glass of water with a shot of ACV, the breakfast of champions. I feel much better, now.
8 am I did about 15 minute on the mat, 4 or five sun salutations and then I juiced 3 carrots, 5 or 6 ribs celery and a wee bit of onion.

Here is the carrot pulp, I will make something to eat out of it later.

I've started taking each different vege pulp out individually to be used in recipes.

Yay for Friday!

Green Smoothie Likes to Do Vegan Laundry and Carrot Tortillas Juice Pulp Recipe

Smoothy is
1 ripe banana
1 roma tomato
about 10 grapes
1 kiwi
1 kale leaf
1 handfull baby greens
1 tbs Renew me
1 tbs AFA
2 tbs flax
Water

That is my pile of cloth napkins. Well, part of it. I get them at goodwill. I wash them in laundry soap that I make myself.

I use soap ends that I buy at the natural foods store in town and borax. 1 part soap, 2 parts borax. Grate the soap and mix in the borax. I store mine in a lidded trash can by the washer and use a tablespoon of the stuff per load. I can't remember how much it costs but it's at least as cheap as commercial laundry soap and it doesn't contain bleach or harsh perfumes.

I made a video about it that you can see here!

*******************************************************************************

What do you do with all that pulp from Juicing? I am always looking for new recipes and trying to find something delicious to do with the leftover vege and fruit pulp when I juice. I compost some of it but it seems like sort of a waste, I know there must be more nutrition in that stuff!
Last night, in a fit of inspiration I made some carrot tortillas with juicing pulp.

Carrot Tortillas

1/2 cup or so of vegetable juice pulp. I used carrot and cucumber.
1.5 cups whole wheat flour
1/4 tsp salt
1 tsp baking powder
2 tbs olive oil
1/2 + 1/8 cup warm water

put in Food Processor with dough blade and process until the dough cleans the bowl.

Pull the dough out and knead with flour until "earlobe" soft. Then break it into eight equal pieces, flour the pieces and put them in a bowl let them rest for an hour or so. I left mine all day and they were quite easy to roll when I finally got around to it.

Roll very thin and cook them about 3 minutes on each side on a really hot skillet or grill. Don't cook them too long or they will get crispy.

Lined with a collard leaf, some leftover beans and sauerkraut.

Wrap it up and eat it.

Tasty!

Tell me, what do you do with your juicing pulp?

Food and the plants they come from...

Dinner last night

Clockwise: vege bread, butter lettuce, salad made from grape tomatoes, broccoli, avocado and I can't remember what else, leftover carrot curry salad, and a meatloaf that I made.

The meatloaf was a franken-sort of thing. I made a seitan sausage that came out all wrong. I forgot the salt and the foil split while the thing was cooking so it puffed up instead of staying all dense the way the sausage should. Boo.
So I took a huge hunk of it and ground it up fine in the FP. Then I added and onion, some vege pulp, pecans, and some barbecue sauce, a wee bit of olive oil. I can't remember what other seasonings. I baked it in my silicone loaf pan for about 2 hours at 350F, covered, then let it cool to room temp. I baked it for another half hour at 400, uncovered. Yum.

Here it is in a butter lettuce leaf ready to be eaten by me.

Both of these salads were REALLY GOOD

****************
PLANTS!!

I got a tomato plant from the Eco Store which is on east main. I couldn't find a online listing for it but I didn't look really hard. I don't think I have the name right.

Anyway, I bought a tomato plant and some swiss chard today, cheap.
I put the tomato in the Topsy Turvy that I bought months ago.

Swiss Chard

My lily is blooming.

The new starts.

A carrot top, rooting.

My celery, rooting. It's growing a lot of leaves!

Tonight for dinner is cabbage soup and something. Baked potatoes, maybe.

Cheers!

Vegan Carrot Soup, Fat Free Garlic Baked Potato, RAW Vegan Banana Pie with Raw Walnut Pie Crust Dessert Recipe

I love carrot soup.

This time I cooked up a bunch of carrots 1/2 cup of dry black eyed peas and some juicing pulp. Cooked it until the beans are soft then let it cool and blend the whole mess. Put it back in the pot and add more water, chopped carrots, 1 cup of dry black eyed peas and season to taste. Let it cook all day, adding more water if needed or turn it off when the peas are cooked and then reheat it at dinner time.

Vegan Fat Free Roasted Garlic Baked Potato

Prick a washed potato.

Put it in a piece of foil with a large, raw, peeled clove of garlic. Be sure to cut off the hard end of the clove, no one wants to eat that.

Bake in foil for 1 hour at 500F. Woo! that is hot. Don't try to touch them. I let mine sit on the table for over half an hour and it was still screaming hot! They are done when a fork easily poke in the side. If too hard, keep baking for 10 minute increments until done.

I served them in these little bowls for ease of transport. Just bake them right on the oven rack, no problem.

Cut the garlic into the baked potato. It doesn't need anything else but you could put some salt and herbs if you want.

Shot was blurry, sorry.

Dinner last night

Baby greens salad with apple pear salsa, sauerkraut, seed cheese and some leftovers that I reheated. Carrot loaf in front and some Indian style veges. There is the roasted garlic potato before cutting. I think it's beautiful. You could even put some vegan buttery spread on this if you wanted, but then it wouldn't be fat free, oh well :)

I am in the process of making some raw seed cheese crackers. I put flax seed, yeast, some sunflower seed cheese and lemon juice together and put it in the dehydrator.

I will let you know if it works, but I don't see why it wouldn't.

The man has requested pie. He looked at the pile of bananas turning brown on the counter and asked if I had walnuts. Then he said, "you should make a pie". I will make a pie with walnut crust and a banana filling. I guess I will go look at some recipes and get some ideas. Maybe I can make a sweet sunflower cheese as a cream topping... The possibilities are only limited by my imagination and ingredients

Vegan Dinner Ideas! Carrot Walnut Meatloaf Recipe

Hi!

I made a loaf. A nutloaf. A vegan veggie loaf. I never really know what to call them so I just call them meatloaf. meatloaves.

MMM. look at that melted cheese goodness all over the top.

it was made from

3 med carrots
3 ribs celery
1 med yellow onion
3 leaves of curly kale
Chop all in the FP until they are pretty much a paste then add your seasonings

I used
Paprika
Cumin
Oregano
Sea salt
2 cloves garlic*

then add
1 cup walnuts
1 tbs whole flax seeds
1/3 cup cooked quinoa
and process until all mixed up. There should still be large pieces of walnuts in the mixture.

Spoon less then half of the mix into a greased loaf pan.
Put 2 handfuls of greens on top of that. I used some baby green salad mix. Put some slices of oat cheese on top of the greens and then another 2 handfuls of greens. Spoon the rest of the meatloaf mixture on top and smash it down. It will fit and the whole thing will shrink as it cooks so, fill it up.

Cover and bake at 350F for two hours. Take it out and let it cool completely.** Uncover and put some sliced oat cheese on top. Heat at 400F for about half an hour. The cheese will be really liquidy and melty. Once you slice the loaf, the cheese on top will run down all over the slices and be delicious.

I served it with a pot of beans and some rye bread which is just my normal bread recipe with 1 cup of rye flour and one cup of whole wheat flour in place of the white flour the recipe calls for.

Footnotes:

*I didn't measure. Just taste it until it seems right or find a meatloaf recipe and use their spices. I just fake it.
**You know how meatloaf is always better the next day? Let it cool completely and then reheat it with cheese and tomato sauce on top and it is the next day! I'm a genius.

Fermenting Vegetables and Sprouting Apples

I read this website today and was inspired to put up some veges.

From left to right:
Cuke and carrot with garlic for pickles.
Carrot and zuke with salt. This will be a carrot-kraut-type-deal
Carrot, zuke, cuke and red bell pepper. I call this one sweet relish.
All three are nothing but veges and salt. The pickles have water in them, too.
It took me about half an hour to do all of this. They should be ready in three days.

I learned today that if it gets moldy on top, just scrap the mold and the under part is good. I have been tossing them out, D'oh! *smacks forehead*

I don't know if you can see it in this photo or not but I left half an apple on the counter over night and it sprouted.

I put the seed in a little pot with dirt but I don't expect much.

Happy Friday!

The Condiment Chronicles :: Beet Kraut :: Carrot Ginger Kraut :: Fermented Vegetables

I cut up some beets. Peeled them, too.

They were so juicy and red.

I shredded them in the food processor

And mixed them up with some 1.5 tsp of salt.

Until they looked like this:

Then I put them in a jar with a loose lid and put them in a dark place to rest for three days.

Then I did the same thing with the carrots and a little ginger.

Again, in a clean jar with a loose lid and in the cupboard you go.

Portrait of the fermenter. We will call this before.

We have company for the weekend* so I won't be here much. I will update tomorrow :)

The Philosophy of Animal Rights by Tom Regan

The other animals humans eat, use in science, hunt, trap, and exploit in a variety of ways, have a life of their own that is of importance to them apart from their utility to us. They are not only in the world, they are aware of it. What happens to them matters to them. Each has a life that fares better or worse for the one whose life it is.

That life includes a variety of biological, individual, and social needs. The satisfaction of these needs is a source of pleasure, their frustration or abuse, a source of pain. In these fundamental ways, the nonhuman animals in labs and on farms, for example, are the same as human beings. And so it is that the ethics of our dealings with them, and with one another, must acknowledge the same fundamental moral principles.

At its deepest level, human ethics is based on the independent value of the individual: The moral worth of any one human being is not to be measured by how useful that person is in advancing the interest of other human beings. To treat human beings in ways that do not honor their independent value is to violate that most basic of human rights: the right of each person to be treated with respect.

The philosophy of animal rights demands only that logic be respected. For any argument that plausibly explains the independent value of human beings implies that other animals have this same value, and have it equally. And any argument that plausibly explains the right of humans to be treated with respect, also implies that these other animals have this same right, and have it equally, too.

It is true, therefore, that women do not exist to serve men, blacks to serve whites, the poor to serve the rich, or the weak to serve the strong. The philosophy of animal rights not only accepts these truths, it insists upon and justifies them.

But this philosophy goes further. By insisting upon and justifying the independent value and rights of other animals, it gives scientifically informed and morally impartial reasons for denying that these animals exist to serve us.

Once this truth is acknowledged, it is easy to understand why the philosophy of animal rights is uncompromising in its response to each and every injustice other animals are made to suffer.

It is not larger, cleaner cages that justice demands in the case of animals used in science, for example, but empty cages: not "traditional" animal agriculture, but a complete end to all commerce in the flesh of dead animals; not "more humane" hunting and trapping, but the total eradication of these barbarous practices.

For when an injustice is absolute, one must oppose it absolutely. It was not "reformed" slavery that justice demanded, not "reformed" child labor, not "reformed" subjugation of women. In each of these cases, abolition was the only moral answer. Merely to reform injustice is to prolong injustice.

The philosophy of animal rights demands this same answer - abolition - in response to the unjust exploitation of other animals. It is not the details of unjust exploitation that must be changed. It is the unjust exploitation itself that must be ended, whether on the farm, in the lab, or among the wild, for example. The philosophy of animal rights asks for nothing more, but neither will it be satisfied with anything less.

Insprirational Vegan Quotes

1. Animals that live in the wild kill other animals in order to eat. If I also lived in the wild would it still be inhumane to kill an animal to eat?? What about if I raised chickens in my backyard and cultivated their eggs for my breakfast omelet, is this inhumane?
A: Because animal flesh and products are not needed for human nutrition killing and eating them is inhumane in any circumstances. No kind of slavery is humane no matter how well the slave is treated. You can't respect someone and then exploit her for her eggs/milk/honey.

2. Do animal rights moralists take into consideration the domestication of animals i.e. history of farming, farming as the back bone to the establishment of the first civilizations. There’s not much literature about the reasons animals have become a central part of human life?
A: History is no excuse to continue to exploit non humans. Animals are not needed for human nutrition. That is a myth perpetuated by industries which make money exploiting non human animals.

3. Is domestication against animals rights? If so, does that make having a dog or cat or horse inhumane?
A: At this time there are a lot of domesticated animals that need tending. Most domesticated animals are just that. They would not exist as we know them if not for domestication. Breeding animals for pets or for food is unnecessary and inhumane. Adopt animals, have them spayed or neutered. Give them a comfortable home where they can live out their lives without being exploited. With time the numbers of "non-food" and "food" animals will go down and eventually there will be no more domesticated food animals or pets.

Ethical veganism results in a profound revolution within the individual; a complete rejection of the paradigm of oppression and violence that she has been taught from childhood to accept as the natural order. It changes her life and the lives of those with whom she shares this vision of nonviolence. Ethical veganism is anything but passive; on the contrary, it is the active refusal to cooperate with injustice. ~Gary L. Francione

"This is what passes for "food" in America today: A collection of nutritionally-obliterated, hormonally-enhanced, chemically-adulterated shapes of refined whatever, all hyped up to make them seem like real food when in fact they're just agricultural byproducts devoid of any real nutrition." ~Mike Adams

"I like not eating animals. Animals are our friends and we shouldn't eat them. Animals need us to take care of them and save them. My mom cooks us vegetables and pretend hamburgers and hotdogs and chicken nuggets and they are healthy for you and taste good! I told all my friends 'you should NOT eat animals!' I hit my friend Levi because he was eating a ham sandwich and wouldn't stop. Then mom said that Levi is an animal too and we have to be nice to all animals even if they eat other animals. I said sorry to Levi, but I wish he would not eat animals anymore. I also like not eating animals because my mom says it helps the earth, like recycling." ~Jacob, 6 yrs old

What is it that should trace the insuperable line? ...The question is not, Can they reason? nor Can they talk? but, Can they suffer?

~Jeremy Bentham (1748-1832)

Can you really ask what reason Pythagoras had for abstaining from flesh? For my part I rather wonder both by what accident and in what state of soul or mind the first man did so, touched his mouth to gore and brought his lips to the flesh of a dead creature, he who set forth tables of dead, stale bodies and ventured to call food and nourishment the parts that had a little before bellowed and cried, moved and lived.

How could his eyes endure the slaughter when throats were slit and hides flayed and limbs torn from limb? How could his nose endure the stench? How was it that the pollution did not turn away his taste, which made contact with the sores of others and sucked juices and serums from mortal wounds?

It is certainly not lions and wolves that we eat out of self-defense; on the contrary, we ignore these and slaughter harmless, tame creatures without stings or teeth to harm us, creatures that, I swear, Nature appears to have produced for the sake of their beauty and grace.

But nothing abashed us, not the flower-like like tinting of the flesh, not the persuasiveness of the harmonious voice, not the cleanliness of their habits or the unusual intelligence that may be found in the poor wretches.

No, for the sake of a little flesh we deprive them of sun, of light, of the duration of life to which they are entitled by birth and being.~Plutarch
