Vegan Mint Pesto Recipe

The crepes came out fantastic.

I got inspiration for my savory mint pesto here

I was thinking of subbing the oil with an avocado but the avocado accidentally fell in my lunch salad.














Savory Mint Pesto.
Like everything should be, this is vegan, soy, dairy, gluten and cruelty free!













1 cup fresh mint. I packed the mint lightly into a measuring cup
6 cloves garlic
1/2 cup pecans
1/2 tsp salt
2 tbs olive oil
1 tbs water

Process all in food processor until creamy. Scrap the sides as needed.

I think i might make up a bunch of this and freeze it for the winter. I have so much mint I hate for it to go to waste.

Ok, all I have to do is whip up some cheese for the filling and then wait until dinner time.
