Raw Vegan Dinner Ideas: Crepes!

I'm making crepes for dinner.  Raw vegan crepes.

So far I have the wrappers in the dehydrator.  I have never made them before so I decided to jump right in and not look at a recipe or anything.  I was inspired by TIWYTShe is featuring a raw squash and coconut crepe.  I have both of those so I went to the kitchen and this is what I did

I put
1tsp salt
200g raw butternut squash
10g dry coconut meat
4 tbs ground flax seed
1 tsp acv
1 tsp nutritional yeast (optional)
1/3 cup of water
all in the food processor with S-blade and process until it's a smooth paste, scraping the sides as needed.

Spread the mixture on your dehydrating sheet about 1/8 inch thick.  This is were i went and got instructions.  Dry 145f for an hour each side or until dry and pliable but not crisp.  I hope this works out ok for me and I don't make it too crisp.  If I do we'll be having raw vegan pizza for dinner.


If it does work right I plan on cutting each one of these in half and roll them up crescent style with seed cheese filling and some kind of sauce over the top.

Oh, I'm excited about dinner!

  1. Hey the food channel had a thing on last night where the chefs had to make 4 dishes based on bananas... one of them sliced plantains (the long way) with a cheese slicer and they used them as taco shells....

  2. Yum. I use all kinds of things for taco shells. I never thought of plantains.
