Vegan Dinner Ideas: Pulp Recipe: Carrot Burgers and Creamy Cashew Cheese Sauce

I made carrot patties for dinner and had them in sandwiches. I used the leftover flat bread for mine.

Carrot Patties

1 cup carrot pulp
1 onion
1/4 cup sunflower seeds
1 tsp salt
1/2 cup celery juice you can use vege broth or water
2 tbs lemon juice

Chop in food processor with s blade until a paste.

Bake at 350 for an hour, flip and bake another hour. Should be crisp on the outside and tender on the inside. Use 1/2 cup for each patty makes 6 patties.

Creamy Cashew Cheese Sauce

1/2 cup cashews
1/4 cup nutritional yeast
1/4 cup rolled oats
1/2 tsp salt
2 cloves garlic
3/4 cup, more or less of water for blending.

Blend until creamy, chill and serve. It will thicken with chilling

  1. I don't quite understand this blog. So many of the recipes are NOT raw.
    I really was hoping for raw vegan ideas.

    Those carrot burgers could be put in the dehydrator for 8 hours or so and they would be raw.

    I eat high raw, all vegan which means I eat raw foods and juice and smoothies and salad all day and a part raw part cooked vegan dinner with my family.

I have to tell you, I tried your cashew creme recipe and it's so freakin delicious I couldn't stop eating it! only I gave less N. yeast - much less, actually, no more than 3 spoons - and it's better this way IMHO. Anyway, thanx for upgrading my bread spread list, here in Poland they don't sell vegan cream cheese so it's pretty much my first one, and it's so good!

  6. azzahar, you have no idea how happy this makes me. I am glad to have helped. Yeah, some people like a little less nutritional yeast, but I really like the stuff. My mom practically raised us on it, lol!
