Makes 4 9" tortillas
1/2 cup masa harina
2/3 cup water
pinch salt (optional)
All ingredients together in a bowl.
Mix with hands until dough is the consistency of grainy play-dough.
If it's too crumbly, wet your hands and knead again until dough sticks together and forms a smooth ball.
This dough can be refrigerated or frozen until you are ready to use it.
Thaw if needed and cut dough ball into 4 pieces.
Roll one piece into a ball and place it in a plastic bag. Flatten and roll with rolling pin until you have a tortilla about 9" across. Carefully peel the plastic away.
In a very hot skillet, place raw tortilla and cook about two minutes on each side until it starts to get little brown spots.
Place on a plate wrapped in a towel to keep warm. Re-heat before eating in microwave for a couple seconds or in warm oven for a few minutes, or on a hot griddle as needed.
