How to Make Tahini

1 cup raw and unhulled sesame seeds
2 tbs olive oil
2 tbs water

Place sesame seeds in food processor with S-blade and process until fully powdered. They should be about the consistency of corn meal.
With processor running add olive oil and water.
Process until smooth, scraping sides as necessary.  It should be the consistency of peanut butter.
Transfer to a glass jar with a tight lid. 
Store in refrigerator.
