Nothing says comfort food like hot pancakes.
Vegan Hot Cakes
1 cup whole wheat flour
1.25 cups water
1 tbs olive oil
1/2 tsp salt
1 tbs sugar
1/4 tsp cinnamon
1/2 tsp baking soda
Medium hot skillet. Make sure it's well heated. I like cast iron for my pancakes.
Pour 1/4 to 1/2 cup batter on well heated, lightly greased skillet.
Wait until the bubbles come and turn the cake when they stay.
Cook on the other side about 3 minutes
Serve hot.
Shown with Earth Balance and Pineapple chutney. Also very good with maple syrup, jam, jelly, peanut butter, almond butter, cashew butter, and whatever else you might like, sweet or savory. Pancakes are versatile you can wrap things in them or make sandwiches with them. Use your imagination and let me know how you like YOUR vegan pancakes!
