Acorn Squash Baked in Mushroom Gravy

Cut one acorn squash in half and place it cut side down on a baking sheet. Bake for one hour, or until soft but not totally cooked. You want the meat to stay in cubes.

Cool, peel and cube the squash and set aside.

Make fat free mushroom and onion gravy

Place cubed squash in baking pan and pour gravy over the top.

Bake one hour covered at 400F, uncover and bake another half hour.

Very filling and satisfying. I served it with some roasted vegetables and salad.
