The original recipe called for pickle. I didn't have any so I subbed vinegar and dill!
Mock Tuna Salad
1 rib celery 1 green onion
Finely chop celery and onion and add:
1 tsp vinegar 2 tsp lemon juice 1 tsp onion powder 2 tsp nutritional yeast 1 tbs soy sauce 2 tbs vegan mayo 2 tbs dried dill 1 tbs dulse flakes 2 tbs ground nori black pepper to taste
Mix spices and mayo with the chopped celery and onion and let it set for a few minutes so the seaweed can rehydrate. Stir well.
Chop
1 15 oz can chickpeas
in the Food Processor or mash them well with a fork.
Mix with veg and spice mixture and chill 1 hour.
Serve on toast with tomatoes and cucumber slices
or do like I like it, wrapped in collard leaves with tomato and zucchini slices
It's an appetizer on a cucumber slice garnished with tomato and dill
As a salad with tomato and cuke
I like to call it Chickpea salad, too.

ReplyDeleteLove that Chickpea Salad! I know it as Chickpea Smash because I first got the recipe from Jill Ovnik of vegangal.com fame.
ReplyDeleteHi, Maria! What a great site http://vegan-gal.com .
ReplyDeleteThanks for the link!
I was craving something tuna-sandwich-like the other day, so I am very happy to have found your blog and this recipe! I plan to try it out soon! I'll be sure to come back and let you know how it worked for me. Thank you soooo much! :)
ReplyDeleteYay! Valerie! I hope you like it. Can't wait to hear how it comes out! Be sure to take photos :)
ReplyDeleteI did try out the recipe... to the best of my ability. I didn't have dulse or nori and I just used fresh squeezed lemon juice and no vinegar. But it still tasted delicious on toast with tomato and cucumber slices!
ReplyDeleteThere was an actual moment when I thought I was actually eating a tuna sandwich! The chickpea's consistency, mashed up, really did mimic tuna fish very well! Yumm! :)
I need to know if it is a violation of your efforts and privacy to post my version of this wonderful recipe on my blog? If so, I can respect that. Just let me know how you feel. Either way, I'm going to have to take a pic, like you suggested, and post it and add a link to your site about all this goodness!
Thank you again! I LOVED your recipe! Happy Valentine's Day! :)
Oh, and where did you find the original "tuna" recipe that calls for a pickle? I'd be interested to look at that, too! Thanks again for such a delicious dish!
ReplyDeleteOh, Gosh, Valerie! That was way back in August. I don't even remember. Sorry :(
