When I eat cooked food, once a month or so, I like squash.

This is a small pumpkin with chopped up sweet potato, carrot, celery, onion, tomato, sunflower seeds, parsely, watercress, sage, olive oil, salt and pepper.
I heat the oven as low as it will go. Ours has a digital readout which tells you how hot it is. How accurate that is, I don't know. It reads 170F.
I put each half of the pumpkins, raw, with raw stuffing in the oven with a dollop of coconut oil on top of each one, a half cup of water in the bottom of each pan to keep them from getting too dry and leave it alone for six hours.
Scrumptious. E kept saying, "You call this cooked? This is barely cooked. Delicious, but not really cooked." Just the way I like it, hehe.
I was able to take the pans out of the oven with no oven mitt, that's how low the oven was. But the pumpkin was soft and the onions were wilted. This was the first time I ever "cooked" with coconut oil and I thought it tasted a lot like Chinese food.
I ate TWO slices, or a whole half pumpkin

And in keeping with the holiday spirit, we have a tree up

It's a vintage EVERGLEAM that I found at Goodwill for $5. Score! I wasn't even going to have a tree, but when I saw that thing, new in the box. I grabbed it and had it set up almost before we got it home, lol.

Because I was out in the tree lot, my strips were done differently.. an ASM picked them up.. and I saw her do it. The other strips are given to a head cashier and then sent to the back office...
That pumpkin dish sure is perdy! I think it looks better raw. And I love the little tinsel tree! Happy Merry to you!
That is probably the coolest christmas tree I've ever seen! And I love the look of your stuffed pumpkin. Yummy!
