Nut Meatloaf

I made this mixture of pecans, carrots, celery, mushrooms, onion, ground flaxseed, sea salt, sage and nutritional yeast. It was a consistancy that was easy to mold and it had a very hearty taste. I made a big batch of it and put it in a bunch of different incarnations. E helped with ideas, his was rolling it up in eggplant which worked very well. Eggplant is so compliant. Slice it thin like 1/4" and dehydrate it for about 2 hours and then just have your way with it.

The inside was very moist. I made patties of this mixture yesterday and that was nice but the little cups make it keep it's shape and are a dream for serving. I'm sure the aluminum is terrible but I reused them from some horrible snack cakes that were thrown out this week, YAY!!!
I will use glass custard cups next time

  2. Yer maykin muh mouf WAT-UH! That looks deeeeeelish-ee-OH-so! You've got a great camera there, too... It captures the color and texture of the food creation perfectly.
