What to do with all that zucchini?

I made a salad!




Southwestern Zuke n Black Bean Salad











grated zucchini
frozen corn
roma tomatoes, diced
cooked black beans
yellow onion, diced

finely chopped raw garlic and jalapeno
vegan mayonnaise
cumin powder

Mix equal amounts of the veges and beans except add twice as much grated zucchini.

Add garlic, jalapeno, mayo, cumin and some salt to taste.
