Vegan Meatballs and Gravy!
Vegan Onion Mushroom Gravy
1 med onion minced
1 1/2 cup broth
2 tbs cornstarch
1/4 cup chopped mushrooms
Saute one onion in a little bit of olive oil until onion starts to caramelize. You want it about half caramelized.
Add broth and heat until the broth starts bubbling. Turn heat down very low.
remove 1/2 cup of hot liquid and add cornstarch. Stir until smooth and then pour it back into the onion and broth mixture. Stir it quickly, it will thicken up quick. Take it off the heat when it is as thick as you want it. If it gets to thick it can easily be thinned it with some more hot broth or water.
Add chopped mushrooms and stir. Salt to taste.
Vegan Walnut Oat Neatballs
1 cup walnuts
1 cup oats
1 med yellow onion
1 tbs nutritional yeast
1/4 cup cooked rice
salt to taste
Puree onion in food processor and transfer to large bowl
Put walnuts, oats and yeast in processor and process until it's a thick paste
Add nut mixture and rice to onion and stir well.
Salt to taste.
Form 1/4 cup "balls" and put them on a greased baking sheet. Bake at 425f for approx 30-45 minutes, until they are brown and crisp on the outside.
