Vegan Burrito Night!

The new fridge. It's so big and BLACK!




















Oh, yeah. Ahem. Dinner.

I whipped up some tortillas















On the grill






























I made Spanish style rice (1 cup rice cooked regular BUT replace 1 cup of cooking water with an 8oz can of tomato sauce) and pureed a can of beans then cooked the beans with 1 tbs olive oil a pinch of salt and some chili flakes

I made a simple salsa with two roma tomatoes, half a yellow onion, 1 large clove garlic, a 1/2 tsp salt and two tbs lemon juice.
















Put it all together with some lettuce...















NOM NOM!!!

  1. My grandparents were born in Mexico and I have fond memories of hanging out in their kitchen while they made TONS of tortillas! They were so good hot off the griddle with melted butter & a pinch of salt. I haven't made a vegan version. Can you post one? Or have you before (long before I started reading your blog)?

    Grandma's tortillas used LARD!
