I was going to make aloo chana but I decided to do it this way instead. i'm glad I did.
Chana (Curry Chickpea or Garbanzo Beans)
Ingredients:
1 yellow onion
1 tbs Mae Ploy yellow curry paste
1 15 oz can garbanzo beans
Directions:
Cut up the onion and cook it in olive oil until translucent.
Add mae ploy yellow curry paste and stir well.
Add garbanzo beans with liquid and let it simmer for a while, 2 hours or more if you can.
I steamed some veges.
Cabbage, potatoes, carrots and zucchini.
I layered it thusly: plain spaghetti noodles on the bottom (or rice), steamed veges in the middle and Chana on top.

I wouldn't change a thing, it was perfect.
I am having a watermelon smoothie for breakfast. That's watermelon in the blender until smooth. I will have a smoothie for lunch, too. It will contain greens from the yard and garden, more watermelon and the usual supplements,

I am still managing to keep it raw until dinner but money has been tight here so we are eating some canned food and that's ok. I'm hanging in there but I'm feeling a little down over the whole thing which is why I haven't been updating as much. Dinner has been boring and cooked and not inspirational. My lips got really chapped on the boat trip and they are kinda Cracked & Crusty right now. I hope they heal quickly because they hurt and i miss kissing the man and I miss being able to smile without pain. It's ok. Things will get better soon.

Thank you so much! I'm in a tizzy today because the landlord is coming and I have to go clean house. Not that it's a sty or anything (that's probably not vegan, lol, sty) but it needs a serious tidying and I got stung by nettles while I was picking blackberries this morning! :(
