Here are the zucchini chips. What's left of them. I had to keep taste testing them :)
The taste is cheesy they are crispy. I'm glad I didn't skin them but you might want to.
Baby greens salad
Pasta with fresh veges and Tofurkey sausage
Put some water on to boil and start cutting up veges. I chopped up about 3 cups of veges including zukes, tomatoes, green onions, green beans, cabbage and 4 cloves of garlic. You use whatever you have. 3 cups is enough for two people at my house.
Tofurkey is optional, cut up half and put it in the pan with the other half of the sausage and about a tbs of water. Let it cook until it starts to get crispy, flipping occasionally, while the water is boiling.
Once the water boils, toss the pasta in and cook it.
When it's cooked to your liking, drain it and put it back in the pan.
Add 1 tbs of olive oil (optional) and 1 tbs of lemon juice.
Toss it over low heat for about 5 minutes, then add the cut up and browned sausage.
Stir and eat with green salad.
