Recipe! Easy Quick Raw Stuffed Avocado Salad

Oh, heck yeah! I was craving something zesty, tangy. Something to make my tastebuds sing...

I was in the store and looking at the grocery list for this raw chili recipe I want to try and started thinking about my lack of kitchen, etc and decided Tuesday night is better for avocados. Yes. Avocado is good. I try to eat one a week. I know, what a sacrifice. Sometimes I eat two. Small ones. I get all my fats from seeds, avo and coconut, so I can make that sacrifice sometimes.
Eating a plant based diet has it's privileges and one of them is sometimes eating avocado for dinner.

Ingredients:



1 small avocado (there are two in the photo, I just used one)
1 roma tomato
half a lemon
black pepper (not shown)













Cut up and de seed the tomato, cut up the avo and scoop from the shell, keeping the shells intact.
I saved the seed to try and sprout. I like sprouting stuff



















Squeeze half the lemon (or less depending on how tangy you want it) over the cut up avo and tomato, add black pepper to taste and stir lightly, keeping the avo intact as much as possible.



















Scoop the mixture into the avo shell "bowls". It will be sloppy and stuff will fall over the sides. It looks good that way!
Garnish with lemon and oh, my, is it ever gooood!!!
