The red sauce is Raw Puttanesca and the white is dairy free cheese made with peanuts.

Raw vegan ceviche
Cut each vegetable or fruit, by hand or with the food processor, in to very small pieces. The pieces should be about the size of a corn kernel.
Cut each vegetable one or two at a time and then dump them in a large bowl
1 cup frozen corn
1 cup butternut squash
1 cup cauliflower
1/2 of a red bell pepper with seeds removed
2 roma tomatoes
1 carrot
1 plum
1 stalk celery
1 onion
3 cloves garlic
Put all chopped veges in a large bowl and add:
1/2 tsp each salt, black pepper, cumin and paprika
juice of one large pink grapefruit.
Stir well keep covered in the fridge 4-6 hours or more.
I was very impressed with this salad. I would add more celery next time.
Raw Vegan Falafel
This was good but not really falafel. Lets call it "just another kind of meatballs"
1 c sunflower seeds
1 tbs sesame seeds
1/2 c corn kernels (fresh or frozen)
1 large clove of garlic
1 small onion, chopped about a cup
1/2 c celery leaf (or parsley or cilantro)
1 roma tomato
1/2 c olives
1 tbs nutritional yeast (optional)
1/2 tsp salt
1 tbs dry dill
1 tsp cumin
1 tsp curry
1 tbs acv
All in the food processor until a paste.
Put in a bowl and add
1/4 c sunflower seeds
1/4 c sesame seeds
Mix well and form 1/4 cup balls. Makes about 15 balls.
Dehydrate at 145F, gently turning every two hours or so until they start to get crispy on the outside.
Massaged Collard Salad. I was pretty impressed with this salad, too.
Chiffonade some collard leaves after cutting the big stems out. add 1 tsp olive oil and a pinch of salt per cup of greens. Massage with your hands for a few minutes then put in the fridge to soften for about an hour. Surprisingly good.

I made the ceviche and it was good. I did not have a plum as local store said they are not in season. I did have an avocado and I like avocado in my ceviche, so I subbed that. It was really good, but did not taste like I remember ceviche (it's been over a year since I gave up fish). So I think I will just call it really good chopped salad. On a side note, I had a butternut squash that grew in my yard and that I did not plant. Probably a stray seed from compost. Wow! The ones I buy at store are really hard and difficult to peel. This was not so hard. It was very goo. I am going to try to grow butternut squash this year. I had no idea they were this good. I like them, but this one was better than any I had before.
