I made a tamale pie/shepard's pie type of casserole with quinoa this weekend.

Soaked but uncooked white quinoa on the bottom. I spread it out like a pie crust, pressing it all about a half inch thick, across the bottom and up the sides. I spooned a layer of seed cheese over the quinoa then filled it with the left-over chili. Then I spread some mashed potatoes on the top and baked it, covered with foil for about 2 hours at 350F.

I baked it on a cookie sheet because I knew it would bubble over.
After 2 hours I took off the top and left it in the 350F oven until the top was crusty and brownish.


I love quinoa! It's so much better than rice and it can be eaten only soaked, you don't have to cook it! I soak it in filtered water over night and then it's ready to be eaten by itself or inserted in a recipe. mil gave me a bunch of it so I have been utilizing it in various ways.
It's amazingly delicious all by itself, nutty, chewy, slightly sweet. It also contains all the amino acids that are needed for the body to assimilate it as a complete protein. In case you missed the link above
In the pie it absorbed the flavor of the chili, and wow. It was good. Next time i will put quinoa on the top and just skip the potatoes!
The boy is home sick again today. Much green snot. eww. He is NOT getting any dairy today, I can tell you that!

I love quinoa! I could eat it for every meal. I mix it in with everything.
