I wanted to feed some tempeh to the man. He never tasted it before and he doesn't like tofu. Personally, I will eat tofu, but I don't buy it for myself. It's just too over processed for my tastes. Tempeh is cooked soybeans that have been formed into cakes and fermented. It has a nutty, tangy sort of flavor and it keeps its shape. When i was single and living alone, I didn't ever cook it but I used to eat it right out of the package with some apple. like cheese. But, as you know, I am weird. 0_O
Someday I will make my own Tempeh I wonder if it can be made from other beans or grains. hmm...
This is one 8oz package of tempeh and one yellow zuke marinating.

I did not put it in the fridge, just covered it with a towel *
The marinade is ACV, water, oregano, basil, garlic. You can use whatever marinade you like best.
I let them there for a few hours, turning them every once in a while to be sure they were getting soaked.
I then made a buttermilk sub out of almond milk and lemon juice. Let that sit and get thick, about ten minutes.
I broke up bread crumbs out of left over heels that I have been saving from my soda bread and put the crumbs on a plate
Then dipped each cutlet and zuke slices in the "milk" and then dredged the them in the crumbs. It was hard to get the breading to stick. I put the slices in the pan and put more crumbs on top of it. I wanted them breaded, dammit.
Then I tossed some brussel sprouts on top because we LOVE us some brussel sprouts around this here joint!
I poured the rest of the "buttermilk" over the whole thing. I didn't want to throw it out and I figured it needed some liquid to cook.
I put it in the oven, covered, at 400F and left it for about an hour and a half. Then I removed the lid and let it crisp up for another 15 minutes.
It was actually pretty good. The veges were nice and tender, the tempeh was tasty and the whole thing had a crispy breading all over it!
Here it is after one serving was scooped out. I am sometimes late with the camera...

I would call it a success! Next time I will make it much better, though. I like making up recipes.
