
About a cup of cashews, soaked
1 tsp (or more) of sugar
1/4 tsp (or less) vanilla extract (not raw and optional)
Add enough filtered water to blend into a smooth, creamy consistency. Chill.
Add sugar and vanil to your taste, really. It's probably quite good without it.
I put it on blueberries and called it BREAKFAST

Thanks, Alison! It was really easy to make and quite decadent tasting. Heavier than whipped cream but lighter than frosting. Better than I expected it to be, but I would use less vanil next time, if there is a next time. I was discussing cashews with my MIL last night and we decided that they are nothing but junk food and should be enjoyed in moderation. Little nutrition and much fat.

Absolutely, nuts are quite fattening. Not something I'd eat everyday, but that looks like something I'd like to try. As you can tell my the things on my blog, I'm not the healthiest of eaters!

Alison, I eat lots of nuts! I make cheese, sauce, milk, toss em in the soup, snack on them in the car, make raw cookies, etc!
With out any animal products, and since I rarely eat processed food (unless i process them myself) I feel that eating a half cup or more of nuts every day is justified. Oh, and only raw nuts, no roasted peanuts. Speaking of peanuts, can you believe 8 people have died from the contamination of pnut butter?
THAT is why I won't eat processed food. YOu have no idea what those people are doing and they don't have a care for you or your health. they just want money and will cut corners to make it.
Now people are afraid of peanuts when what they need to fear is food processed by underpaid strangers.
It's a sick, sad world.
