Easy dehydrator recipe!
eggplant should be cut into thick strips.
Make your favorite marinade.
I used:
one half apple, seeded
1/2 cup water
1tbs acv (apple cider vinegar)
2 tbs Ginger
1 lg clove garlic
Salt
2 tbs fresh horseradish
1 tbs black peppercorns, whole
All ingredients in the blender except the peppercorns
blend until liquefied, add more water if necessary. Add the peppercorns after everything is blended and pulse to break them up, coarsely
Cut the eggplant into 1/2 inch thick and about 2" wide strips.
Put the eggplant in the marinade for at least two hours or overnight.
After marinating place strips on dehydrator rack and dry until they are tough and chewy. Do it too long and they get crispy, like chips. Still tasty, but not jerky.

Oooh, I so want a dehydrator ::pouts:: I don't think I have enough room for another appliance right now, but it is the first thing on my list to get after we move and I have my own kitchen back! This sounds yummy :)

ReplyDeleteIt's small 11" x 11", five racks and would be a great starter or great for a small space.
I don't expect it to sell for much more than $20 and it's in new condition.
Just a thought...
