Hummus is made from chickpeas, usually, but chickpeas, or garbanzo beans are practically inedible raw. At least to me. I soaked, sprouted and blended them and even with a ton of garlic and tahini, they still tasted like raw beans. Blech.
I was despondent over the loss of my old friend hummus. And then a few months ago I saw a recipe for raw hummus made from zucchini. Despondency retreated!
I forgot about it for a while but today when I was wondering what's for lunch, I remembered!
I've made hummus before so I really don't need a recipe.
Here are the ingredients:

1 cup peeled and cubed eggplant
1 sm peeled and chopped zucchini
1/4 cup olive oil (you could use less, but oil makes it more tasty. Seriously, you're eating raw, splurge on a few tbs of oil)
1/3 cup sesame seeds
1/4 cup lemon juice
1 large clove garlic
Salt to taste
Blend well. and serve with crudites, crackers, put it in wraps or use as mayonnaise substitute in sandwiches and salads. The possibilities are endless, just like my love for hummus.
I blended it all in my new toy:

$22 dollars at BigLots, a steal. It came with 6 cups, all with lids and removeable grips, and two blades, one cross and one flat for dry ingredients

The flavor will improve if you let it set in the fridge for 2 hrs or overnight, even better!
Don't forget to PEEL the zuke and eggplant, or it won't be hummus. It will be a green and purple chunky mess. Hummus is SMOOoooth.

Here it is on some flax seed bread I made. You could call them pizza, or sandwich. Whichever you prefer.
The closer one is bread, hummous and mango salsa. The further is bread, brazil nut cheese and mango salsa.
The Brazil nut cheese is a simple vegan spread, a cup of nuts, olive oil, lemon juice and salt.

I haven't made the zucchini hummus yet.. I am wary of it, but should give it a try. I've made a really good sprouted chickpea hummus before, but it still creeped me out..and I don't think set well with me. I'm interested in trying the eggplant.. although am wary of it raw too.. hmm.. but I'll try it! The best things are often things you'd never do without some serious prompting!

Melo, raw eggplant is great. It is very tough but pliable and you can make wraps, lasagna, etc with it. People are stigmatized by it, many people think that it must be cooked to be eaten but that is a myth.
