Ok, first I made nut meat meat substitute. This one is walnut, flax, carrot, onion, celery, beet and seasonings like salt. Then I flattened it in a vaguely square shape and covered it with spinach, thusly

Then the rolling begins. I folded up about a 1/4 of it with the wax paper on the top.

I peeled back the paper and then folded it up again, folding over more of the meatloaf, keep rolling it until it's rolled. I really can't explain it but it's easier than I thought it would be and you can do it!!!
It should look something like this when you are done.

I am going to dehydrate it for a couple of hours and then

I will cut it into two pieces, cover it with marinara sauce and return it to the dehydrator until dinner time.

UPDATE: It came out ok. There are a few things I would do differently, next time, but all around a great dish!
At this point it had been in the dehydrator for over an hour. I took it out and chopped it in half to make two individual servings. I topped it with sundried tomato & sunflower seed cheese and some raw marinara.

I dehydrated it for at least four more hours and it looked like this:

Ingrid of Raw Epicurean asked me if the spinach wilted after dehydrating. Well, Ingrid, it did a little. It was still kinda fresh, but warm and a little wilty.
Things I would do differently:
I would roll out the meat a bit thinner and longer and use a LOT more spinach.
I would put cheese and marinara on the INSIDE of the roll also, not just on the top.

Mmmmm... It looks good, ingredients wise... But maybe I'd make it a little wider 'cause it looks like a liddle poooh-pie. Teehee!
Raw Nut Loaf! Yum! When it was finished dehydrating, did the spinach inside wilt?
SC, you are funny. I thought it looked like a big meat doobie, but that's because I rolled up a bunch of greens in the middle, lol!
