Quest for Raw, Vegan EggNog Begins. May I coin the term Veganog?

I've been thinking about it a lot and I finally made some tonight. First time ever making nut milk.

I used almonds. I soaked a half a pound over night and then let them "sprout" for two days, rinsing twice a day.
Put almonds in the blender with about 2 cups water and blend the living daylights out of it and strain it. I used a handkerchief but you can get special nut milk straining bags, use an nylon stocking, or a fine strainer. The handkerchief is easy for me, cheesecloth works, too.

After straining the meal from the milk, either compost the meal or freeze it to use in recipes later. The meal can also be used as a beauty product, it makes a nice scrub and the almond oil is very moisturizing. But that is another entry. I am on the quest for veganog. Veegnog? Almond Banana Nog is what I think I am going to call it when it's done, but I'm jumping ahead.

I tasted the milk to see what its like plain, no salt, or sweetener. It tasted good. I would pour it on cornflakes. If I ate cornflakes.

Rinse out the blender carafe and put the milk back into it.

Now is where the shroud, or veil of mystery drops. This is what I did tonight.

About a cup and a half of nut milk. I didn't measure. I added one dried fig and blended it a lot. I tasted it and it was sweet. It will need to be sweeter, but good enough for me tonight. I get the idea.
Then I added vanilla. I bought a vanilla bean, the pack says organic but I don't know if it's raw. I cut about a quarter of an inch piece and blended, then tasted. Closer to eggnog, but needed spice and still thin. This was when I realized I didn't have a banana. Dang.

So I put an eighth of a tsp of nutmeg in and it was too much. I would use that much for twice as much nog next time.

So, almond milk, one date, vanil, nutmeg and blend, blend, blend.

I tasted it and I know what it needs.

You guessed it. Banana.

It needs to be thicker and sweeter. half a banana and half as much nutmeg and this would have been a triumph.

Here is what's left of it and the first blogged photo from my new camera.
Stay tuned. I'm not giving up.
