Day 3 the baby sprouts are starting to show little yellow leaf beginnings and this is when they are most delicious and ready to eat!
If they grow much more they will start to get bitter, which can be good in a salad. They taste different at each stage of growth. Taste them every day to find out when you like them best. Cover your sprouts, or keep them in a cupboard. They like cool room temps, and they grow better in the dark. I think they are seeking the light or something.
I started making sprouts for my birds a few years ago. I have a little plastic sprouter and everything. I started eating them right along with the birds, had never eaten my own before, especially this mix of seeds. Yummy!
