
The man brought home a nice yellow squash from work so I made this quick and yummy for lunch today.
Yellow Squash and Quinoa
serves 1 for a meal or two as a side dish
1 med yellow squash, chopped (about 9 inches, this one was)
1 med yellow onion, chopped
14 cherry tomatoes, halved
1/2 cup water (or broth)
pinch of salt
1 tbs red quinoa
Chop all veges and put in a saucepan with water, salt and quinoa.
Mix well and heat until very bubbly. Put a lid on and turn it down to low. Leave it for 10-20 minutes then stir and eat!
