Beet Your Meat Raw Vegan Burgers :: They Beat Meat, Hands Down!

I endeavor to keep it as raw as I can.

This morning I juiced celery, beet greens and carrot with a bit of ginger. I thought it would be nice to have burgers. Raw burgers that are better than anything cooked.
So I made up this recipe:

Beet Your Meat Raw Vegan Burgers

Process about 1 cup of juicing pulp in FP with
1/2 small beet root chopped
2 cloves garlic
one med onion chopped
one roma tomato chopped
2/3 cup walnuts
1 tsp cumin
1/2 tsp salt (optional)

Form patties on parchment paper and dehydrate at 125F for about 2 hours.















When the patties get crispy on one side flip them out on the rack and dry for another 2 hours at 115F, until they are crispy on the outside and tender in. These can be made a few hours in advance and warmed in the dehydrator for 15-20 min at 125F before serving.

Dress them like you would any burger and chow down.

I am keeping it raw so I had mine on a collard leaf with seed cheese, tomato, sauerkraut and onion. I picked the whole thing up and folded it like a taco and yum yum.
Collard leaves are the new bread.
